A Healthy and Delicious Winter Salad


A homemade beet salad is one of my favorite lunches. It’s fresh, flavorful, and versatile, making it a perfect light meal.

PRODUCE for 2 people
1 large beet (I usually cook 3 at a time to have some leftover)
1 orange, peeled and cut into fillets
1 red pepper, cut into small cubes
1 handful of grape tomatoes, cut into halves
1 handful of black grapes, cut into halves

PREPERATION
Prepare the Beets: Rinse the beets thoroughly under cold water to remove dirt. You can peel them beforehand if you prefer, but it’s easier to peel after boiling.
Trim the Tops and Roots: Cut off the beet greens and the root tip, leaving about an inch of stem to prevent bleeding.
Boil Water: Fill a large pot with water, enough to cover the beets completely. Bring the water to a boil.
Add the Beets: Carefully place the beets into the boiling water.
Cook: Reduce the heat to a simmer. Boil the beets for about 30-45 minutes, depending on their size. You can check doneness by inserting a fork or skewer; it should go in easily.
Cool and Peel: Drain the beets and let them cool slightly. Once they’re cool enough to handle, peel off the skins — they should come off easily.

I made a olive oil, balsamic vinegar, and mustard dressing to go with it. On side I had some fresh multigrain bread, perfect to soak up the dressing.
