Orange Marmalade

Ingredients

4 oranges
1/3 lemon
sugar
2 tsp. vodka

Preparation

Zest 2 oranges and a third of the lemon. Fillet all oranges and 1/3 of the lemon. Put everything in a measuring cup. Then pour the fruit in a bowl and add the same amount of water to the fruit. Let the mixture rest in the fridge for 24 hours.
Boil the fruit hard for 1 hour. Add 1 pound sugar to each pound fruit and liquid. Boil slowly 20-30 minutes or until juice sheets from spoon. If so desired add 2 tsp. of vodka. Fill marmalade into hot, sterile glasses and seal.
