Orange Biscotti

Ingredients

1/3 cup butter
2/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
2 eggs
2 1/4 cups all-purpose flour
3/4 cups candied orange peel
finely shredded peel of 2 oranges
1 table spoon Grand Marnier
2 semisweet chocolates

Preparation

Beat butter until soft, add sugar, baking powder, baking soda and mix well before adding the rest of the ingredients (not the chocolate). Knead the dough until it's smooth.
Shape dough into logs about 2 1/2 inches wide, flatten slighly. Place logs onto buttered cookie sheet. Bake in a 375º oven for about 20 to 25 minutes. Cool off for about 30 minutes.
Carefully transfer the logs onto a cutting board. Cut each log into 1/2-inch-thick slices with a sharp knife. Place the slices onto an ungreased cookie sheet and bake in a 325º oven 8 to 10 minutes. Turn the biscotti and bake another 8 to 10 minutes until crisp and lighly brown.
Once the cookies are cold, dip the bottom third into melted chocolate.
