Jam-filled Shortbread Sandwich Cookies (Spitzbuebe)

jam-filled shortbread sandwich cookies

Ingredients

250 grams butter
120 grams sugar
1 egg white
1 pinch salt
2 teaspoons vanilla sugar
a bit of lemon zest and juice
350 grams flour
red currant jelly or seedless raspberry jam
powdered sugar

Preparation

Mix butter and sugar until fluffy. Add the rest of the ingredients (except the jelly and powdered sugar)and beat well. Let the dough rest for about 1 hour in cool place.
Roll out the dough about 3 mm thick. With a round cutter cut out an even number of cookies. Half of the cookies (these will be the tops) will have to be cut in the middle with a small cutter i.e. a heart or 3 small round cutters. Place cookies on buttered baking sheet and bake at 200°C in preheated oven for 3 to 6 minutes. They should be a pale golden color.
Once the cookies are cooled off, dust the tops with powdered sugar, spread a thin layer of jelly onto the bottom halves, and stick the 2 parts together.

I just found the Spitzbuben recipe on your site. They are my dad's fave Christmas cookies and were always made by my paternal grand mother. Since she died six years ago, we've not had them ... until this year! Yay ...
