Rich Shortbread Cookies (Mailänderli)

Ingredients

250 grams butter
250 grams sugar
3 eggs
1 pinch of salt
1 lemon peel
a few drops of lemon juice
500 grams flour
egg yolk

Preparation

Beat butter until soft, add sugar and eggs. Once the batter is very pale add the rest of the ingredients (except the egg yolk) and mix well. Let dough rest in cool place for about one hour.
Roll out dough until about 6 mm thick. To cut out cookies, use any shape cutter. Place cookies on buttered baking sheet, and brush on the egg yolk. Bake in preheated oven at 200°C for 10 minutes.
